Evacuating the space in a thermos eliminates (or at least greatly reduces, because the vacuum isn’t perfect, and there are still physical connections between the inner and outer shells of the thermos through which heat can be conducted) heat transfer by both conduction and convection.
Radiation still operates, but usually, the thermos walls are made shiny (high albedo) to reduce radiative heat transfer.
